The road to great barbeque is an old road travelled. Going back to an age-old method of cooking developed by Native Americans. We know this better as “Pit Cooking” which is a method of cooking meat slowly over indirect heat from the burning of wood. This tenderises, cures and flavours the meat. Smoke from the wood is what differentiates barbecue form all types of cooking.
Authentic barbeque is still cooked the old way, low and slow, at low heat for a long period of time. This pit method of cooking is replicated in our modern day steel smokers. We smoke using hickory or apple wood. All our meats are cooked in these American smokers from fresh to be served daily in the restaurant.
Our beef briskets are smoked for up to 8 hours, with our pulled Pork and pulled beef for even longer at 16 hours.
We use recipes that have been handed down through generations from well-known American Pit Masters from the Deep South of Texas.
The Bullpit is inspired by family childhood memories and the aim is to create a family atmosphere while sharing the ‘old school’ tricks of a real barbecue for everyone to enjoy. The restaurant is decorated with a huge, horned, bull’s head behind the saloon style bar and pistol bar stools. There is plenty of authentic original memorabilia: signs, saddles, cowboys, even a rattlesnake, bringing Texas to Newquay.
