Mark has been at the helm of the kitchen at the Fowey Harbour Hotel for over 20 years, guiding the team through some significant changes during that time, not least recently becoming part of Harbour Hotels. Striking a new balance, Mark cooks really good food served in a relaxed brasserie setting. From core company dishes, which you can enjoy across all of Harbour’s coastal hotels in Devon and Cornwall, to his own daily specials, Mark maximises on long-standing relationships with local suppliers to bring the finest of ingredients to the table. Mark is committed to buying local, using the highest quality produce he can and food at its freshest.  

With supporting the local region and economy in mind, why not take a stroll around Fowey where you will find a plethora of independent shops, boutiques and galleries – the town even has its own Gin Shop and Tasting Room courtesy of local distillers, Tarquin’s. Or for those that prefer to be on the water, take a cruise on a luxury motorboat from Fowey Maritime Centre and enjoy one of the hotel’s luxury picnics moored up in the calm waters of Lantic Bay.
