John Pollard, Chef Director, has developed the hotel’s dining concept. John and his team are masters when it comes to uniting fresh, locally grown produce with farm-raised meats and wild-caught seafood, creating the freshest and most delicious dishes. Indeed, on the menu you’ll find a tempting selection that includes tempura prawns, seared scallops, the Harbour Twice Baked Soufflé, Cornish sole and, of course, the team’s signature Seafood Burger.
