Full on flavour
With a love for Cornwall and a passion for food, we discover that The Cornish Pizza Company in St Agnes is much more than your average pizza takeaway!
Based in the village of St Agnes on the rugged north Cornish coast, The Cornish Pizza Company places a keen focus on quality ingredients and, most importantly, freshness. We catch up with owners Tim and Fiona Barton, who tell us: “We love everything about Cornwall, especially the provenance of food here. We work closely with a number of local producers, sourcing Cornish cheeses, Cornish veg and charcuterie from Duchy Charcuterie; we even forage our own wild seasonal ingredients!”
“We regularly update our specials, which allows us to get really creative with our seasonal ingredients”
But it’s not just the toppings that set their artisan pizzas apart. As Tim tells us: “It’s got to start with a good base; well developed dough from good quality, stone-ground organic flour, allowed to prove slowly and to develop flavour. A long fermentation of over 24 hours makes a much more digestible, better tasting pizza.” Indeed, even as we speak to Tim, he tells us that he’s in the midst of making the next batch!
With such a fantastic array of Cornish ingredients available, Tim tells us: “We regularly update our specials, which allows us to get really creative with our seasonal ingredients.” He points us to the recent special of Cornish venison bresaola cured in Cornish gin, with locally foraged wild garlic and nettle pesto. In Tim’s words, this one was “absolutely delicious!”
As if all this wasn’t enough, we learn that it’s not just the pizza menu that promises to spoil you for choice. Looking to the year ahead, Tim continues: “We’re planning to install a further two beer lines, meaning we’ll be able to offer four Cornish beers at a time, as well as wine and prosecco by the glass. We’ll also be continuing our ‘Meet the Brewer’ evenings, showcasing some of the best independent microbreweries in Cornwall.” The next event will introduce Pipeline Brewing Company from St Agnes, offering guests the chance to sample their selection of small-batch crafted beers alongside the team’s delicious pizza menu.
With a focus on fresh, local and authentic ingredients and an ever-changing specials board that promises something new every time you visit, if you’re a discerning foodie in search of something a little different on Cornwall’s rugged north coast, a trip to The Cornish Pizza Company comes highly recommended!
