Marrying incredible menus with a country pub feel, The Rising Sun has elevated the gastropub to new heights.
Back in 2014 Tom Hannon realised his dream. Now Chef Patron of The Rising Sun in Truro, Tom, and wife Katie, extend a warm, friendly and genuine welcome (there are no ‘too cool for school’ attitudes here) at this wonderfully unassuming dining destination that has created a loyal foodie following and industry acclaim based on their ethos of inherent and uncompromising quality and attention to detail.
Having trained alongside Michelin star chefs, Tom’s passion, energy and drive are infectious. His love of classic flavours and precision cooking see him develop menus that guests want to return to again and again. Katie’s background in art and design has ensured the quirky, intimate spaces in the 18th century building are used to their full potential, adding a contemporary feel to a relaxed and unpretentious environment.
Tom and his kitchen team create a dining experience that is sophisticated and creative with a fantastic balance of flavours and textures cleverly constructed to elevate and enhance the best seasonal ingredients. Procurement from passionate local suppliers is at the core of the kitchen ethos and shines through on the menu, from rod and line-caught fish (they are licensed to buy direct from fishermen) to vegetables from a justice-oriented, ecologically supportive and sustainable farm a few miles away.
You could be forgiven for assuming it is all about the food at this little gem of a pub, but with one of the best back bar selections to be found in the county it is most definitely a destination for craft spirits, carefully curated cocktails, unconventional wines and award-winning national and local beers. The same ethos to responsible sourcing and sustainability in the food runs right through the pub. From biodynamic wines (Katie is a trained sommelier and curates the wine list around these values whilst creating
a list perfectly in sync with Tom’s indulgent food) and local craft beers to locally grown, seasonal flowers on the tables.
In spite of such excellence across the board, there is not an ounce of snobbery to be found here. Whether you fancy a refreshing cold pint of Sharps Offshore or an exquisite wine to match every course, the crew are more than happy to share their knowledge and recommend favourite tipples.
