Set for the summer

With big plans for the season, Tom, Katie and the team are gearing up for summer fun at The Rising Sun. 

Having trained alongside Michelin star chefs, and now Chef Patron of The Rising Sun in Truro, Tom Hannon’s passion, energy and drive are infectious. His love of classic flavours and precision cooking see him develop menus that guests want to return to again and again. Katie’s background in art and design has ensured the quirky, intimate spaces in the 18th century building are used to their full potential, adding a contemporary feel to a relaxed and unpretentious environment.

Tom and his kitchen team create a dining experience that is sophisticated, with a fantastic balance of flavours and textures cleverly constructed to elevate and enhance the best seasonal ingredients. Procurement from passionate local suppliers is at the core of the kitchen ethos and shines through on the menu, from rod and line-caught fish (they are licensed to buy direct from fishermen) to vegetables from a justice-oriented, ecologically supportive and sustainable farm a few miles away.

You could be forgiven for assuming it is all about the food at this little gem of a pub, but with one of the best back bar selections to be found in the county it is most definitely a destination for craft spirits, carefully curated cocktails, unconventional wines and award-winning national and local beers. The same ethos for responsible sourcing and sustainability in the food runs right through the pub, from biodynamic wines (Tom’s wife Katie is a trained sommelier and curates the wine list around these values whilst creating a list perfectly in sync with Tom’s indulgent food) to local craft beers and locally grown, seasonal flowers on the tables.  

With a newly renovated courtyard garden on the scene this spring and summer, you can expect laid-back summer seafood barbeques, fabulous feast nights and mini festivals through the season. The first event will be a dinner and wine tasting evening with the incredible Italian wine producer, Antinori. Think canapés and drinks in the courtyard garden to kick things off, before a five-course menu paired with exquisite wines in the restaurant, all hosted by Antinori’s charming Emanuele. 

What’s more, we can expect a much-anticipated whiskey event to take place in the courtyard garden later in the summer with the inspirational Craft Irish Whiskey Company. But, if you can’t wait until then to pop in, find a comfy seat and try The Taoscán Experience! Their multi-award-winning chestnut and tawny port Irish whiskey is one of a kind and will certainly leave you wanting more.
